Wild salmon roll and purple prawn with pumpkin tzatziki and celeriac

Tortelli with black truffle, Kobe ragù, velvety blue
of sheep and chlorophyll

Umbrella fillet with golden mouth in casserole and glazed with seafood, mashed potatoes and bitter herb flan
