The staging of the show consists of a series of stations for a guided individual tasting. The actresses-waitresses accompany the spectator-customer to discover the typical flavors of Salento. Typical food products reflect and bear witness to the culture (not only material) from which they were born. We offer five typical Salento products for tasting (mùscari, scapèce, dried tomatoes in oil, African and Negroamaro). Who does not grasp the close connection between the flavors of these products and the generous earth that produces them? The bitter layering of the lampascione, the strong and robust flavor of the scapece, the sweet acidity of the tomato, the harmonious vigor of the negroamaro give an original touch to the Salento cuisine. The reverberating light of Salento emerges, the soft stone of the Baroque buildings, the geographical condition of the Salento peninsula of true bottom of Italy, as Piovene says, and the tarantolate pilgrimage, bitten by the spider especially in summer when the women were more busy in field work. In short, culture and crops, knowledge and flavors united by a single breath that feeds the miracle of a territory, the Salento, rich in tradition and future.
The 25-minute performance, aimed at a maximum of 30 people, can be presented several times during the day.
